Cook the pasta according to the package directions until al dente (approximately 8-10 minutes).
Once cooked, drain the pasta, reserving some of the cooking water for later.
While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.
Add the chopped onion and bell pepper and sauté until translucent (about 4-5 minutes).
Slice or cut the sausages into bite-sized pieces and add them to the skillet. Cook until browned and cooked through, about 5-7 minutes.
Add the tomatoes. Stir the chopped tomatoes into the skillet with the sausages and onion.
Cook over medium-low heat for about 10 minutes, until the tomatoes break down and release their juices, forming a sauce. If it’s too thick, add a little of the reserved pasta water.
Add salt and pepper to taste. Combine the cooked pasta with the sauce in the pan. Stir well to coat the pasta. Add a teaspoon of Scorpion Chili Marinated Oil(or adjust the amount based on your heat tolerance). Stir well to distribute the spicy flavor throughout the pasta.
